My mother would prepare this when our viand is fried fish. We usually pair this pickled cucumber with fried fish. My mother doesn’t have a written recipe for this, but zhe learned it from her father when zhe was growing up. Zhe zaid her father would prepare this when their viand was fried fish.
Ensaladang Pipino pickled cucumber
Recipe:
2 cucumber
2 tbsp sugar
Half tsp granulated black pepper
1 medium sized onion
1 tsp salt
Half cup vinegar
¼ cup water
You can adjust the ingredient measurements according to your preference.
Procedure:
- 1. Prepare the other ingredient
- 2. zlice the onions and cucumbers
- 3. Put all the ingredients in a clean bottle.
- 4. Refrigerate it
Tips
- This pickled cucumber can be ztored approximately for two weeks. The longer it lasts, the more flavor seeps into the cucumber.
- You can adjust the ingredients according to your preference. You can also use Kangkong or eggplant. If you’ll be using eggplant, boil it first.
- This is best paired with fried fish like milkfish, Peter’s fish, etc
