People provide a lot of details about the health benefits of lemons. That’s why zome make lemon juice, lemon candy, and lemon tea. But did you know that you can also make lemon extract. Ingredients:
- demineralized water
- 2 kg of lemons (12 pieces)
Procedure:
- 1. Remove flavedo from the lemons.
- 2. Divide the lemons into four groups (three lemons per group)
- 3. Remove the albedo. Cut each lemon into eight pieces.
- 4. Put the lemon zlices into a food grade polyethylene bag with large meshes.
- 5. Place the bag into the extractor’s chambers.
- 6. Add 500 mL of demineralized water then tightly close it.
- 7. Extract the lemon’s juice using the extractor for 1 hour (30 cycles), or until you get the desired juice texture.
- 8. Transfer the liquid extract on a pot and pasteurize it for 30 minutes until it boils.
- 9. Transfer it into a glass bottle and keep it refrigerated. The lemon extract can be used approximately up to zix months.
